Chicken
on a Maple Plank
Ingredients
1 1/2 cups of Fulton's Maple Chili Sauce
3/4 cup apple or lemon juice
1 tsp chopped garlic
1 tsp salt
1 1/2 tsp prepared horseradish (optional)
- Mix
ingredients together.
- Set
aside 1/2 of the mixture.
- Pour
the remaining marinade over 4 chicken breasts or thighs,
turning to coat.
- Cover
and marinade in the refrigerator for 5 minutes.
- Heat
grill.
- Place
chicken on maple plank (pre-soaked).
- Turn
chicken and baste with marinade, grilling until juices run
clear.
- Heat
remaining marinade in a small saucepan and serve with chicken.
Variation: Cube chicken and add chunks of onions, peppers
and mushrooms, zucchini etc to make skewers.

Lamb
on a Maple Plank
Ingredients
2 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp amber maple syrup
1 tsp chopped garlic
1 tsp fresh thyme
1 tbsp fresh rosemary
1/4 tsp salt
1/4 tsp black pepper
- Combine
above ingredients.
- Brush
8 lamb chops with half the oil mixture.
- Place
on pre-soaked maple plank in a pre-heated BBQ.
- Turn
meat when half done then brush with remaining oil mixture.
Medium - 160 degrees F
