Julia's Maple Pancakes
My daughter Julia cannot tolerate wheat so we make these especially for her. You can use wheat flour substitute spelt flour in its place.


Ingredients
1 1/3 cup flour
3 tsp baking powder
1/2 tsp salt
3 tbsp granulated maple sugar (or white sugar)
1 egg
1 1/4 cups of milk (I usually use 1 cup)
3 tbsp melted butter or oil (olive is nice)
1/4 tsp vanilla

  • Stir flour, baking powder, salt and sugar together.
  • Beat egg thoroughly then add milk.
  • Add the wet ingredients to the dry ingredients then slowly add the melted butter and vanilla.
  • Stir quickly until mixed and batter is slightly lumpy.
  • Pour round circles of batter onto a hot greased griddle.
  • Cook and serve with pure maple syrup!
