Oatmeal Buckwheat Blueberry Pancakes

Bowl #1
1 1/2 cups rolled oats
2 cups milk
2 eggs
1/4 cup melted butter

Bowl # 2
1/2 cup flour
1/2 cup buckwheat flour
1 tbsp. Granulated Maple Sugar
1/2 to 1 tsp salt
1/2 tsp cinnamon
1 tbsp baking powder
1/4 to 1/3 cup of finely chopped walnuts
3/4 cup of frozen blueberries

  • Mix together the first set of ingredients.
  • In another bowl mix together the second set of ingredients (except blueberries)
  • Pour bowl # 1 into bowl # 2 and mix.
  • Stir in blueberries.
  • Pour pancakes onto hot griddle and cook.
  • Serve with maple syrup or granulated maple sugar.
  • Keep extra pancakes tightly wrapped in the refrigerator.
