Maple
Nut Muffins
Ingredients
2 eggs
1 cup sour cream
1 cup Fulton's Maple Syrup
1 cup all purpose flour
1 cup bran flakes
1 tsp baking soda
¾ cup hazelnuts coarsely chopped

Preheat
oven to 400 degrees F. Grease 12 muffin tins.

Beat
eggs with fork in large bowl to blend.

Stir
in sour cream and 1 cup of Fulton's Maple Syrup.

Add
flour, bran flakes and baking soda.

Stir
until batter is moistened. Mix in hazelnuts.

Fill
muffin cups ¾ full. Bake about15 minutes.
Glaze for the Maple nut Muffins

Combine
2/3 cup Fulton's Maple Syrup with 6 tbsp. butter in a small
saucepan over medium heat. Stir until mixture is well blended.

Remove
muffins from pan. Place 1 tsp. Glaze into bottom of each cup.

Dip
top of each muffin into glaze, then return muffins to cups
upright.

Let
stand 15 minutes so bottoms of muffins absorb glaze. Serve
warm.
