Maple and Spice Biscotti

Ingredients
Vegetable oil cooking spray
2 ½ cups all purpose flour
2/3 cup Fulton's maple syrup
2/3 cup brown sugar
¼ cup raisins
1 ½ tsp apple pie spice*
2 eggs
2 egg whites
1 tbsp canola oil
2 tsp vanilla extract
Icing
2/3 cup icing sugar
1 tsp Fulton's maple syrup
1 ½ tbsp milk
1 tsp maple extract
*Apple pie spice: Combine ½ tsp cinnamon, ¼ tsp nutmeg, 1/8 tsp allspice and dash of ginger to equal 1 tsp apple pie spice.

  • Preheat oven 350F. Lightly coat a 15½"x10½" jelly roll pan with cooking spray and dust with flour.
  • In a bowl, combine flour, brown sugar, raisins, and apple pie spice.
  • In a small bowl, lightly beat eggs, egg whites, oil, vanilla, extract, and maple syrup.
  • Stir egg mixture into dry ingredients to form a dough.
  • Using a rubber spatula, transfer the dough onto the jelly roll pan. Wet the spatula, with water and shape the dough into a log about 15"x3".
  • Bake for 30 - 35 minutes.
  • Remove from oven and cut crosswise into ¾" slices. Place slices on a clean baking sheet and continue to bake for 15 minutes until lightly crisp.
  • Remove from oven and place on wax paper on a wire rack.
  • Blend icing sugar, milk, maple syrup and extract. Drizzle over each biscotti. Allow to dry.
  • Variation: Can also add ½ cup chopped toasted walnuts.
